Lemon caper cod
Ingredients
- 4 cod fillets (about 6 oz each)
- 2 tablespoons capers, drained
- 2 lemons (1 sliced, 1 juiced)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons avocado oil (or olive oil)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Heat 1 tablespoon of avocado oil in a large oven-safe skillet over medium-high heat.
Add the cod fillets and sear for about 2 minutes per side, just until lightly golden (they won’t be cooked through yet). Remove from heat.
- Drizzle the fillets with the remaining oil and the juice of 1 lemon. Scatter the capers over the top and tuck lemon slices around the fish.
- Transfer the skillet (or move the fillets to a baking dish) to the preheated oven.
Bake for 8–12 minutes, depending on thickness, until the cod easily flakes with a fork.
- Spoon some of the lemony, caper-studded sauce from the pan over the fillets.
Serve hot with extra lemon wedges on the side.
