Watermelon feta salad

Ingredients

  • Arugula
  • Watermelon
  • Feta cheese
  • Fresh mint

Instructions

  1. Place the arugula in a large bowl.
  2. If the watermelon is not pre-cut, slice it into bite-sized pieces and add to the bowl.
  3. Add the feta cheese and chopped mint.
  4. Toss gently to combine.
  5. Serve on its own or pair with chicken or your favorite protein. Perfect for a summer day!
