Sweet Potato Turkey Skillet (Easy One-Pan Dinner)

Ingredients

  • 1 tbsp olive oil
  • ½ yellow onion, diced
  • 1 red bell pepper, diced
  • 1 lb ground turkey
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¾ tsp salt
  • ¼ tsp black pepper

Vegetables & Add-ins

  • 2 medium sweet potatoes, diced
  • ½ cup chicken bone broth 
  • 1 can black beans, drained and rinsed
  • 2 cups baby spinach

Toppings

  • Fresh cilantro or parsley
  • Juice of 1 lime

Instructions


1. Cook the vegetables by heating olive oil in a large skillet over medium heat. Add the diced onion and bell pepper and sauté for about 4 minutes, until softened.

2. Brown the turkey by adding the ground turkey and spices to the skillet. Break the turkey apart with a spoon and cook until mostly browned, about 6–8 minutes.

3. Add the diced sweet potatoes and chicken broth to the pan. Cover and cook for 8–10 minutes, stirring occasionally, until the sweet potatoes are tender.

4. Stir in the black beans and spinach. Cook for another 1–2 minutes until the spinach wilts. Sprinkle cheese over the skillet and let it melt.

5. Finish with chopped cilantro and a squeeze of fresh lime juice before serving.

Storage

Store leftovers in an airtight container in the refrigerator for 3–4 days. It reheats well for quick lunches or dinners.
