Sheet pan sausage and peppers

Ingredients

  • 1 package sweet Italian sausage (I like Trader Joe’s)
  • 3–4 colorful bell peppers, sliced
  • 1 yellow onion, sliced
  • 1–2 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions


  1. Preheat your oven to 400°F and line a sheet pan with parchment paper.
  2. Slice the bell peppers and yellow onion into strips and place them on the sheet pan.
  3. Place the sausages on top of the vegetables.
  4. Drizzle olive oil over the peppers and onions and season with salt and pepper. Toss the vegetables slightly so they are evenly coated.
  5. Bake for 25–30 minutes, flipping the sausages halfway through, until the sausage is fully cooked and the vegetables are tender and slightly caramelized.
