Sheet pan sausage and peppers
Ingredients
- 1 package sweet Italian sausage (I like Trader Joe’s)
- 3–4 colorful bell peppers, sliced
- 1 yellow onion, sliced
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F and line a sheet pan with parchment paper.
- Slice the bell peppers and yellow onion into strips and place them on the sheet pan.
- Place the sausages on top of the vegetables.
- Drizzle olive oil over the peppers and onions and season with salt and pepper. Toss the vegetables slightly so they are evenly coated.
- Bake for 25–30 minutes, flipping the sausages halfway through, until the sausage is fully cooked and the vegetables are tender and slightly caramelized.
