Roasted Veggie & Sausage Meal Prep Bowls
Ingredients
- 1 pack of sausage of your choice (I like Bilinski’s or Amylu)
- Brussels sprouts, halved
- 1–2 sweet potatoes, diced
- 1 small head of cauliflower, chopped into florets
- 1 red onion, sliced
- 1–2 zucchinis, sliced into half-moons
- Avocado oil or olive oil
- Salt, pepper, garlic powder
- Optional: paprika, Italian seasoning, crushed red pepper flakes
- Toppings for serving: avocado, hot sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Chop all the veggies and spread them out evenly on a large sheet pan.
- Slice sausages into rounds and scatter them over the veggies.
Drizzle with avocado oil or olive oil, then season generously with salt, pepper, garlic powder, and any other seasonings you like.
- Toss everything on the sheet pan to coat evenly.
- Roast for 30–40 minutes, or until veggies are tender and slightly golden—test with a fork.
- Let cool slightly, then portion into meal prep containers.
- Store in the fridge for up to 4–5 days. When ready to eat, top with sliced avocado and a drizzle of hot sauce.
