Peach and Arugula salad

Ingredients

  • 1–2 cups arugula
  • 1 peach, sliced
  • 1 cup pre-cooked chicken, sliced or shredded
  • ¼ cup feta cheese, crumbled (from a block)
  • 1–2 tablespoons balsamic vinegar or balsamic glaze

Instructions

  1. Add the arugula to a bowl or plate.
  2. Top the arugula with sliced peach and the pre-cooked chicken.
  3. Crumble feta cheese over the salad.
  4. Drizzle balsamic vinegar or balsamic glaze over the top.
  5. Enjoy.
