Peach and Arugula salad
Ingredients
- 1–2 cups arugula
- 1 peach, sliced
- 1 cup pre-cooked chicken, sliced or shredded
- ¼ cup feta cheese, crumbled (from a block)
- 1–2 tablespoons balsamic vinegar or balsamic glaze
Instructions
- Add the arugula to a bowl or plate.
- Top the arugula with sliced peach and the pre-cooked chicken.
- Crumble feta cheese over the salad.
- Drizzle balsamic vinegar or balsamic glaze over the top.
- Enjoy.
