KALE AND WHITE BEAN SALAD

Salad Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1–2 tsp avocado oil (for massaging the kale)
  • 1 ripe avocado, diced
  • 1/3 cup shredded Parmesan cheese
  • 1 cup cooked white beans (like cannellini or navy beans)
  • Optional: 1 cup cooked chicken, chopped or shredded

Dressing Ingredients 

  • 2 tbsp lemon juice (about 1 small lemon)
  • 1 tsp honey (or more to taste)
  • 1 clove garlic, minced
  • 1–2 tbsp olive oil or avocado oil
  • Pinch of salt (to taste)
  • Optional: black pepper to taste

Instructions

  1. Prepare the kale:
    • Place chopped kale in a large bowl.
    • Drizzle with avocado oil and massage the leaves with your hands for 1–2 minutes until they soften and darken in color. This helps reduce bitterness and makes it easier to digest. 

         2. Mix the dressing:

  • In a small bowl or jar, whisk together lemon juice, honey, minced garlic, oil, and salt until well combined.

         3. Assemble the salad:

  • Add the white beans, diced avocado, and Parmesan to the massaged kale.
  • Add cooked chicken if using.

         4. Dress and toss:

  • Pour the dressing over the salad and toss everything gently to coat.

         5. Serve: Top with extra Parmesan or a squeeze of lemon, and enjoy fresh!
