Greek Turkey Meatballs
- 1 lb ground turkey
- 1 egg
- ½ cup feta cheese, crumbled
- ½ cup spinach, finely chopped
- ¼ onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- ¾ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
Homemade Tzatziki
- 1 single-serve plain Greek yogurt
- 1–2 tbsp fresh dill, chopped
- Juice of ½ lemon
- Pinch of salt
Greek Salad
- 1 cucumber, chopped
- ¼ red onion, thinly sliced
- ½ cup feta cheese
- 1 tomato, chopped (optional)
Instructions
Make the Meatballs
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl combine: ground turkey, egg, feta, chopped spinach, chopped onion, garlic, parsley salt, pepper, and oregano.
- Mix until just combined.
- Roll into 1–1½ inch meatballs and place on the baking sheet.
- Bake for 15–18 minutes, until cooked through and lightly golden.
Make the Tzatziki
- In a small bowl mix together: Greek yogurt, chopped dill, lemon juice, pinch of salt.
- Stir until smooth.
- Refrigerate until ready to serve.
Make the Greek Salad
- In a bowl combine: Chopped cucumber, red onion, feta and tomato (optional).
- Toss together.
- Add a drizzle of olive oil and squeeze of lemon if desired.
Assemble
Serve the Greek turkey meatballs with a side of Greek salad and a generous spoon of tzatziki for dipping.
