Greek Turkey Meatballs with Homemade Tzatziki & Greek Salad

Ingredients

Greek Turkey Meatballs

  • 1 lb ground turkey
  • 1 egg
  • ½ cup feta cheese, crumbled
  • ½ cup spinach, finely chopped
  • ¼ onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano

Homemade Tzatziki

  • 1 single-serve plain Greek yogurt
  • 1–2 tbsp fresh dill, chopped
  • Juice of ½ lemon
  • Pinch of salt

Greek Salad

  • 1 cucumber, chopped
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese
  • 1 tomato, chopped (optional)


Instructions


Make the Meatballs

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl combine: ground turkey, egg, feta, chopped spinach, chopped onion, garlic, parsley salt, pepper, and oregano.
  3. Mix until just combined.
  4. Roll into 1–1½ inch meatballs and place on the baking sheet.
  5. Bake for 15–18 minutes, until cooked through and lightly golden.

Make the Tzatziki

  1. In a small bowl mix together: Greek yogurt, chopped dill, lemon juice, pinch of salt.
  2. Stir until smooth.
  3. Refrigerate until ready to serve.

Make the Greek Salad

  1. In a bowl combine: Chopped cucumber, red onion, feta and tomato (optional).
  2. Toss together.
  3. Add a drizzle of olive oil and squeeze of lemon if desired.

Assemble

Serve the Greek turkey meatballs with a side of Greek salad and a generous spoon of tzatziki for dipping.
