Egg White Bites

Ingredients

  • Egg whites (enough to fill your muffin tin about ¾ full per cup)
  • 2 red bell peppers, diced
  • ½ yellow onion, finely chopped
  • 1 cup frozen broccoli, thawed and chopped
  • ½ cup cottage cheese
  • 4 slices turkey bacon, cooked and chopped
  • Salt, pepper, garlic powder (to taste)
  • Optional: shredded cheese of your choice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a muffin tin with nonstick cooking spray.
  3. Divide the chopped vegetables evenly among the muffin cups.
  4. Add cottage cheese and turkey bacon to each cup. You can also sprinkle in some shredded cheese for extra flavor and protein.
  5. Pour egg whites into each muffin cup until just over ¾ full.
  6. Season with salt, pepper, and garlic powder.
  7. Bake for 25–30 minutes, or until the egg whites are fully set and no liquid remains.
  8. Let cool slightly before removing from the tin.

Note

These store well in the fridge and make for a perfect grab-and-go breakfast during the week!
