Chinese Chicken Salad

Salad Ingredients

  • 2 cups shredded purple cabbage
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 ripe avocado, diced
  • 1½ cups cooked rotisserie chicken (or homemade cooked chicken), shredded
  • 1 cup shelled edamame (steamed)
  • ½ cup wonton crisps or strips


Dressing Ingredients 

  • 2 tbsp almond butter
  • 1½ tbsp white wine vinegar
  • 1 clove garlic, minced
  • 2 tbsp coconut aminos (or low-sodium soy sauce)
  • 1 tsp honey (adjust to taste)

Instructions

  1. Prep the base: Shred the cabbages and carrots. Dice the avocado. If not using rotisserie chicken, cook and shred your preferred chicken.
  2. Mix the salad: In a large bowl, combine all salad ingredients: cabbages, carrots, avocado, chicken, edamame, and wonton crisps.
  3. Make the dressing: In a small bowl, whisk together almond butter, vinegar, garlic, coconut aminos, and honey until smooth.
  4. Toss & serve: Pour the dressing over the salad and toss until everything is well coated.
  5. Enjoy immediately for crunch and freshness!

Optional Toppings:

  • Sesame seeds
  • Green onions
  • Crushed peanuts or almonds
  • A squeeze of lime for extra zing
