Chinese Chicken Salad
Salad Ingredients
- 2 cups shredded purple cabbage
- 2 cups shredded green cabbage
- 1 cup shredded carrots
- 1 ripe avocado, diced
- 1½ cups cooked rotisserie chicken (or homemade cooked chicken), shredded
- 1 cup shelled edamame (steamed)
- ½ cup wonton crisps or strips
Dressing Ingredients
- 2 tbsp almond butter
- 1½ tbsp white wine vinegar
- 1 clove garlic, minced
- 2 tbsp coconut aminos (or low-sodium soy sauce)
- 1 tsp honey (adjust to taste)
Instructions
- Prep the base: Shred the cabbages and carrots. Dice the avocado. If not using rotisserie chicken, cook and shred your preferred chicken.
- Mix the salad: In a large bowl, combine all salad ingredients: cabbages, carrots, avocado, chicken, edamame, and wonton crisps.
- Make the dressing: In a small bowl, whisk together almond butter, vinegar, garlic, coconut aminos, and honey until smooth.
- Toss & serve: Pour the dressing over the salad and toss until everything is well coated.
- Enjoy immediately for crunch and freshness!

- Sesame seeds
- Green onions
- Crushed peanuts or almonds
- A squeeze of lime for extra zing
