Chicken fajita bowls

Ingredients

  • Chicken (breast or thighs)
  • 1–2 red bell peppers, sliced
  • 1 yellow onion, sliced
  • 1 cup frozen roasted corn
  • 1 avocado or prepared guacamole
  • Shredded cheese (your choice)
  • Lettuce, chopped
  • Hot sauce or Siete sauce
  • Siete Foods Fajita Seasoning
  • Salsa

Instructions

  1. Season the chicken generously with Siete Fajita Seasoning. Cook in a skillet over medium heat until fully cooked, then set aside.
  2. In the same skillet, sauté the sliced red peppers and onion until softened. Add the frozen roasted corn and cook until heated through.
  3. While the vegetables are cooking, chop the lettuce and prepare the avocado or guacamole and other toppings.
  4. Assemble your plate with the cooked chicken, sautéed vegetables, lettuce, cheese, salsa, and guacamole.
  5. Finish with a drizzle of hot sauce or Siete sauce for an extra kick.
