Beef and cottage cheese bowls
Ingredients
- 8 oz ground beef
- 2 tbsp Siete taco seasoning (or seasoning of choice)
- 1 cup cottage cheese
- 2 cups Brussels sprouts, halved
- 2 cups sweet potatoes, cubed (skin on)
- 1–2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Prep & Roast the Vegetables
- Preheat oven to 425°F
- Toss Brussels sprouts and sweet potato cubes separately with olive oil, salt, and pepper.
- Spread on a baking sheet (keep them separate if you prefer).
- Roast for 20–25 minutes, flipping halfway, until caramelized and tender.
2. Cook the Ground Beef
- While veggies roast, heat a skillet over medium heat.
- Add ground beef and cook, breaking it apart with a spatula, until browned (about 6–8 minutes).
- Drain excess fat if needed.
- Stir in Siete seasoning and a splash of water, mixing until well coated.
3. Assemble the Bowls
- Divide roasted sweet potatoes, Brussels sprouts, and seasoned beef into two bowls.
- Add ½ cup cottage cheese to each bowl as a creamy topping.
4. Serve & Enjoy
- Enjoy warm as a balanced, high-protein, nutrient-rich meal.
