Beef and cottage cheese bowls

Ingredients

  • 8 oz ground beef
  • 2 tbsp Siete taco seasoning (or seasoning of choice)
  • 1 cup cottage cheese
  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, cubed (skin on)
  • 1–2 tbsp olive oil
  • Salt & pepper to taste



Instructions

  1. Prep & Roast the Vegetables
    • Preheat oven to 425°F 
    • Toss Brussels sprouts and sweet potato cubes separately with olive oil, salt, and pepper.
    • Spread on a baking sheet (keep them separate if you prefer).
    • Roast for 20–25 minutes, flipping halfway, until caramelized and tender.


         2. Cook the Ground Beef

  • While veggies roast, heat a skillet over medium heat.
  • Add ground beef and cook, breaking it apart with a spatula, until browned (about 6–8 minutes).
  • Drain excess fat if needed.
  • Stir in Siete seasoning and a splash of water, mixing until well coated.

         3. Assemble the Bowls

  • Divide roasted sweet potatoes, Brussels sprouts, and seasoned beef into two bowls.
  • Add ½ cup cottage cheese to each bowl as a creamy topping.

         4. Serve & Enjoy

  • Enjoy warm as a balanced, high-protein, nutrient-rich meal.
